I couldn't sleep last night. I was having cheese dreams so insistent that I just keep waking up and fretting.

The Cowgirl Creamery Mt Tam is probably ripe. I need to eat it *now*. But the wife keeps wanting to break into the Midnight Moon and we can't finish both. And the applewood smoked goat cheese..... how long will that stay fresh? But I really want to try the Mimolette, even though it will be fine for weeks and I have others that I must eat first. And what about the reviews I'm behind on? Are those going to write themselves? But all that cheddar!!!! I can't wait to dig into that. And the Cabecou Feuille. That was yummy. I could probably make something like that. And........ Ugh.

I'm not sure if I woke in a sweat in the middle of the night and screamed. "CHEEEEESE!!!!" But I might have. I certainly felt under attack in some Wallace & Gromit sort of way. Hopefully I won't develop a pernicious cheese phobia that scuttles the entire project.
