Danbo Cheese

Okay. We'll be cheating here. Big time.

So one of the cheeses from the "Cheese Shop" sketch is Fynbo. Sort of. All of the scripts for the skit actually list it as either bimbo or fimbo, neither of which are cheeses. So if my goal in life is to try all of the cheeses mentioned in that Monty Pythyon sketch, what the hell should I eat? Fynbo is closest, and it's listed in the only "official" cheese list from the sketch over at Wikipedia. But...... since I wrote that cheese list over at Wikipedia I suppose I can just ignore it if I want. Right?

Here's the deal - Fynbo is a popular cheese in Denmark made on the island of Fyn. But I've had zero luck getting it in the U.S.. So okay, Fynbo is basically a version of Samsoe. But I can't get that either. Hmmmmm...... So we cheat. Samsoe is described as being like young Gouda or Emmental (which aren't anything alike but let's just ignore that), which is also sort of like Danbo, which just happens to be from Denmak, and which sort of sounds like Fynbo. So if I try Danbo, that counts as one of the sketch cheeses. Yes it does. Stop laughing.

Danbo is one of the most popular cheeses in Denmark. It's very fruity, nutty, and fragrant. Sweet, smooth, medium hard, cheesy. Yummy and easily approachable. Very nice as a table cheese, but with very good melting properties. If one were to describe it as a combination of a young Gouda and Emmental they wouldn't be far off.

Danbo is frequently sold with caraway seeds mixed in, but we tried the plain variety here.


If I were to cheat on this one, I would have eaten a Danish bimbo.
