Beaufort d'Alpage Cheese ReviewJun 1st, '06
Beaufort is one of the cheeses from the Monty Python cheese shop skit. Or is it? The cheese Mousebender mentions is Savoyard (as listed by the online scripts), but that isn't a cheese, and it may not even be a real word. Is it suppose to be savoyarde, which refers to something related to the Savoie region of France? Or perhaps the fondue style? No one knows, and I seem to be the only one who's ever wondered.
Well, since it's my quest, and no one else appears to be spending much time worrying about this important issue, I will set the matter to rest right now - For the record, Savoyard cheese really means Beaufort, which is a cheese commonly used in Savoyarde fondue.
Beaufort itself? Well it's a lot like Gruyère or Emmental. Fruity and nutty with a rich cheese flavor. Perhaps a bit more aromatic and flavorful. Perhaps a little less chewy. The Beaufort "d'Alpage" I got is from free range mountain cows only, which is suppose to make it taste like idyllic pastures and wildflowers, but I can't confirm that. My sample tasted like cheese. Okay....... Maybe it had some floral notes. But why get all geeky about it? Beaufort is a cheese you should be putting in your fondue. Simple as that.
